Sausage Recipes

Potato Sausage, Swedish

4 feet medium casings
1 pound lean beef
½pound lean pork
½ pound pork fat
5 large potatoes
1 large onion, chopped coarsely
½ teaspoon white pepper
½ teaspoon black pepper
½ teaspoon ground allspice
½ teaspoon nutmeg
2 teaspoons salt
1 clove garlic, finely minced

Grind the meats through fine disk. Peel and boil the potatoes for approximately 8 minutes. Just make sure they are still firm in the center or they will not hold up in the sausage making process. Cube potatoes and mix with all other ingredients. Stuff into casings. Boil for 40 to 50 minutes. Some like to use a broth to boil them in instead of water, like chicken or turkey broth. Eat right away or refrigerate.
