The Chinese hang these to dry, but maybe a dehydrator would work as well.
3 pound ground pork
2 teaspoon salt
2 tablespoon soy sauce
1 tablespoon sherry
3 tablespoon good scotch
½ tablespoon 5 spice powder
2 tablespoon brown sugar
a little water to moisten, if needed.
Mix all ingredients together in a bowl and put through meat grinder to sausage tube into casings. Bake as other sausages.
