Camarones Acapulquenos (Acapulco Shrimp)

1 pound uncooked shrimp
1 ¼ cups water
2 tablespoon butter
½ onion, finely chopped
3 cloves minced garlic
1 green chili, finely chopped
3 tablespoon parsley, chopped
3 large tomatoes, chopped
2 tablespoon tomato paste
juice of 1 lime
dash salt and pepper

Garnish:
2 tablespoon parsley, chopped
lime wedges
boiled rice

Peel and devein shrimp. Reserve raw shrimp. Boil shells only for 15 to 20 minutes. Strain and reserve liquid. Sauté onions, garlic, chili and parsley. Add tomatoes, tomato paste, lime juice, salt and pepper. Simmer for 10 to 15 until thickened. Add reserved shrimp liquid, simmer for 5 minutes. Add raw shrimp and cook until pink. Serve with rice and garnish with lime wedges and parsley.
