2 pounds kale deveined and coarsely chopped
½ pound chourico (preferably Portuguese but can use Spanish)
14 ounce can kidney beans
¼ cup salt pork diced.
1 cup potatoes cubed
1 medium onion diced
1 teaspoon salt
½ teaspoon black pepper
6 cups water
Sauté salt pork and onions. Drain fat. Add remaining ingredients. Bring to boil and simmer covered for 1 hour. Smash some of the potatoes to thicken soup.
