This delicious one-dish meal is good for you too! Serve with lots of crusty bread.
2 teaspoons olive oil
1 clove garlic
1 cup onions chopped
⅔ cup carrots finely chopped
1 10 ounce package frozen spinach, thawed
4 cups chicken broth
1 28 ounce can diced tomatoes
1 19 ounce can white kidney beans
1 ½ teaspoons dried basil
1 bay leaf
⅓ cup whole wheat macaroni
fresh parmesan cheese, shredded
Heat oil over medium heat and add garlic, onions and carrots. Cook until softened. Add everything except the macaroni. Cover and simmer for 15 minutes. Add macaroni and continue to cook for 10 minutes. Grate fresh parmesan on top before serving.
