Habas Con Jamon (Beans and Ham)

This dish can be found in a tapas bar, on a menu as an appetizer or served in a home as a side dish.

¾ ounce butter
1 small onion, chopped
6 ounces serrano ham or prosciutto, chopped
2 garlic cloves, minced
1¼ pounds fava beans — fresh or frozen
½ cup dry white wine
¾ cup chicken stock

Melt the butter in a large saucepan and stir in the onion, ham and garlic. Cook over medium heat for 5 minutes, stirring often, until the onion softens. Add the fava beans and the wine and cook over high heat until the liquid is reduced by half. Add the stock, reduce the heat to low-medium and cook for 10 minutes. Uncover and simmer for another 10 minutes or until the beans are tender and most of the liquid has evaporated.

Serve hot with crusty bread.
