Cider is the beverage of choice in the Asturias, Galicia and Basque regions of Espana (Spain) and this dish is a favorite within these regions.
3 tablespoons olive oil
1 small onion, minced
1½ teaspoons sweet paprika — pimenton
½ cup apple cider, alcoholic
¼ cup chicken stock
1 bay leaf
2 spanish chorizo, sliced diagonally, about ¾ pound
2 teaspoons sherry wine vinegar
2 teaspoons fresh parsley, minced
Heat oil in saucepan over low heat, add the onion and cook for 6 minutes until soft, stirring occasionally. Add the paprika and cook for 1 minute, stirring constantly. Increase the heat to medium and add the cider, stock and bay leak to the pan and bring to a boil. Reduce the heat and simmer for 5 minutes. Add the chorizo and simmer for 5 additional minutes. Stir in the sherry vinegar and parsley. Season to taste and serve hot.
