Recipe from: Kwahadi
½ cup granulated sugar
½ cup brown sugar
2 tablespoons kosher salt
3 tablespoons black pepper
3 tablespoons garlic powder
2 tablespoons chili powder
½ teaspoon cumin
½ teaspoon thyme
½ teaspoon oregano
1 teaspoon paprika
1 teaspoon dried onion
1 crushed bay leaf
½ teaspoon dry mustard, optional
Mix all ingredients well. Rub onto both sides of ribs, then wrap in butcher's paper or plastic wrap. Let meat set for 2 to 3 hours minimum at room temperature or in refrigerator.
