Servings: about 3 ounces
Use 2 tablespoons per 4 servings. Rub on to pork chops up to 8 hours before grilling, chicken breasts up to 4 hours in advance, prawns up to 2 hours in advance and fish up to 30 minutes ahead.
3 tablespoons cardamom pods
2 ½ tablespoons cumin seeds
2 tablespoons coriander seeds
1 ½ tablespoons black peppercorns
1 tablespoon cloves
2 teaspoons ground cinnamon
1 teaspoon grated nutmeg
Lightly crush cardamom pods. Discard skins and reserve seeds. Toast cardamom seeds, cumin, coriander, peppercorns and cloves. Leave to cool. Crush toasted spices to a powder. Blend with cinnamon and nutmeg.
