Bamia Stew (Kuwaiti Lamb or Beef Stew)

Servings: 4

1 pound okra, remove heads
½ pound lamb or beef
1 large onion, chopped
4 large tomatoes, chopped
1 can tomato paste
salt
1 teaspoon ground coriander seed
1 teaspoon cumin
½ teaspoon black pepper
1 tablespoon tamarind pulp, soaked in water
3 cloves garlic, chopped

Brown the meat without oil until it absorbs all its liquid. Add the onions then the spices and garlic. Mix well and add the tomatoes. Let the stew cook on medium. heat w/ the lid on. Add the water when the tomatoes appear to soften. Let it simmer for 15 min. then add the okra, paste and salt. Let the stew cook slowly and towards the end add the strained tamarinds. Serve hot with rice.
