1 pound white fish, ground
4 tablespoons fish sauce
1 pound shrimp, ground
4 tablespoons corn starch
¼ cup fresh green beans, chopped
½ teaspoon sugar
2 garlic cloves, fine chopped
½ teaspoon black pepper
2 eggs
1 ½ tablespoon fresh cilantro, chopped
2 teaspoon red curry paste
Mix all ingredients until thick. Form patties with mixture and fry in approximately 1 inch of peanut oil.
Serve with dipping sauce.
Dipping Sauce
6 tablespoons water
6 tablespoons sugar
1 tablespoon rice vinegar
1 teaspoon prik pon
2 tablespoons chopped peanuts
cilantro, chopped
Put the water, sugar and vinegar into a pan and dissolve the sugar over a low heat. Once the sugar has dissolved bring the water to the boil and boil for 5 minutes. Turn off the heat and add the chili powder and peanuts. Leave to cool and serve garnished with the cilantro.
