We (Korat people) called it laab"phaa-.
Grill a cat fish, garlic, lemon grass, red onion, and galangal (khaa'). Crush them well together (except the fish) add the roasted dried chillies, continue to glide (sp?) Add the power made from roasted rice (khaaw"khua") the kind used in laab". Then fix it with fish sauce, lemon/lime and some hot water. Like the above nam^phrik", dip it with vegetable of your choice but don't forget cucumber (the Korean long cucumber with thin skin is ideal!). This one has a smell of khaaw"khua" which makes it delicious.
