Kai Phat Yot Khao Pot (Chicken with Baby Corn) ไก่ผัดยอดข้าวโพด

A very easy recipe to prepare, this is especially delicious when served with hot steamed jasmine rice khao suay.

3 tablespoons oil
1 pound boneless chicken, thinly sliced
3 cloves garlic, crushed
1 cup baby corn
½ cup halved straw mushrooms
2 tablespoon oyster sauce
2 tablespoon fish sauce
2 tablespoon sugar
½ teaspoon freshly ground peppercorns
2 green onions/scallions/spring onions, cut into 1 inch pieces

Heat a medium skillet on high heat and add the oil, chicken, and garlic. Stir-Fry for 2 minutes and add all the remaining ingredients. Continue to cook until the chicken is done and all ingredients are combined. Remove to serving plate and serve with steamed rice.
