4 cups water
1 cup salt
½ cup sugar
2 ½ pound green mangoes
Combine all the ingredients for the pickling solution in a medium enamel or stainless steel pot, heat to boiling, then set aside and allow to cool.
Peel the mangoes and slice into sections, leaving in large pieces. Place in a large container (glass is best) and pour the pickling solution over the mango pieces to cover.
Allow to sit for at least 2 weeks before eating.
