1 snapper weighing about 1 ½ pounds
1 tablespoon light soy sauce
1 tablespoon oyster sauce
2 pounded cilantro roots
1 tablespoon shredded ginger
1 tablespoon shredded prik ki nu daeng
3 spring onions, cut into short lengths
½ teaspoon sugar
¼ teaspoon pepper
Scale, clean, and wash the fish and place on a dish. Place the fish in the steamer after the water has begun to boil and steam the fish until nearly done, about 10 minutes. Open the steamer, sprinkle all the other ingredients over the fish, close the lid and continue steaming. When done, remove and serve.
