1 barbequed chicken
2 spring shallots, cut into thin slices
2 bell chiles, cut into thin slices and blanched
1 ½ tablespoon finely sliced garlic
1 thinly sliced prik ki nu
½ cup mint leaves
2 tablespoons finely sliced kaffir lime leaves
½ cup shredded green mango
½ cup pan-roasted peanuts
Cut the chicken into thin slices. Toss the chicken and the dressing together. Add the chile, spring shallots, garlic, mint, kaffir lime leaves, mango and peanuts. Toss gently. Transfer to a plate, sprinkle with the prik ki nu and serve.
For the Dressing:
½ tablespoon roasted dried large chile, pounded
½ tablespoon sugar
3 tablespoons nam pla
3 tablespoons lime juice
Mix all the ingredients in a pot and heat. When the mixture comes to a boil, remove from the heat.
