3 eggs
5 strips bacon
3 lettuce leaves
1 tablespoon finely sliced prik ki nu
¼ cup finely sliced onion
1 teaspoon sugar
2 tablespoons nam pla
2 tablespoons lime juice
oil for frying
Place a wok on medium heat. When it is hot, pour in the oil. Allow the oil to become very hot. Break the eggs into a bowl, but do not beat them. Pour the eggs into the center of the hot oil, fry them up until bubbly and crisp, and then remove and set them aside. Fry the bacon until crisp and set aside. Mix the nam pla, lime juice and sugar until the sugar dissolves, then add the chile. Cut the fried egg into eighths and arrange so the egg assumes its original shape. Sprinkle with the onion. Cut the bacon into one inch lengths and place these on top. Pout the sauce over the egg. Decorate with lettuce leaves, carrot, cucumber, and serve.
