1 pound small river prawns
2 tablespoons chopped mature ginger
3 tablespoons sliced spring onion

20 cloves fresh garlic
1 tablespoon finely chopped cilantro root
3 pickled garlic bulbs
3 tablespoons finely chopped shallot
4 to 5 tablespoons lime juice
3 tablespoons nam pla
½ teaspoon sugar
Wash, shell, and devein the prawns. Place next to each other on a plate and place the ginger and spring onions on top of them. Place in a steamer in which the water is already boiling and steam until done, about 5 minutes. Remove and arrange on a serving platter.
Finely chop the chile, fresh garlic, cilantro root, pickled garlic, and shallots. Mix with the lime juice, fish sauce, and sugar. Stir well, then pour over the steamed prawns.
