2 pieces of snapper meat, about 2 ½ ounces each
1 tablespoon sliced chili peppers
2 tablespoons minced garlic
3 tablespoon. sliced lemon grass
1 tablespoon kaffir lime leaves cut finely
1 tablespoon cilantro root, cut finely
1 teaspoon black pepper
1 cup mint
¼ teaspoon salt
½ teaspoon sugar
2 tablespoon nam pla
3 tablespoon lemon juice
Clean the fish and dry it with paper towel. Ground black pepper, cilantro root and salt together and mix it with the fish. Leave the fish in refrigerator for 30 minutes. Then steam with high heat for 15 minutes.
Mix fish sauce, lemon juice, sugar, lemongrass, chili peppers, garlic and kaffir lime leaves together. Add more lemon juice if you like it more sour. Put the sauce on top of steamed fish and dress with mint.
