¼ pound thin slices of boiled pork
¼ pound thin slices of boiled shrimp
1 hard-boiled egg
1 head of lettuce
2 cucumbers, sliced
1 onion, cut into thin slices
1 tablespoon cilantro leaves
¼ cup mint leaves
1 thinly sliced phrik ki nu
Wash the lettuce and cut into short pieces. Wash and peel the cucumber and slice diagonally. Place the pork, shrimp, lettuce, cucumber, onion, cilantro and mint leaves in a bowl, add the dressing and toss gently. Transfer to a plate, garnish with egg slices and thinly sliced phrik ki nu. Serve.
For the Dressing:
2 phrik ki nu
1 clove garlic
½ tablespoon pounded cilantro root
2 peppercorns
2 tablespoons sugar
2 tablespoons nam pla
2 tablespoons lime juice
3 tablespoons vinegar
Pound the chiles, garlic, cilantro root and peppercorns until well ground. Add the sugar, nam plah, vinegar and lime juice. Stir to mix. Taste and adjust as required.
