Recipe from: Papaya Salad
1 package dried cellophane noodles
½ cup small shrimp, poached and shelled
2 tablespoons garlic, peeled and chopped
2 tablespoons phrik ki nu
¼ cup lime juice
3 tablespoons nam pla
2 tablespoons palm sugar
3 tablespoons fried cashew nuts
fresh vegetables, like cucumbers, sweet basil leaves, string beans, etc.
Boil dried cellophane noodles in boiling water until cooked. Cool, then remove and drain. Pound garlic and phrik ki nu until fairly fine. Add lime juice, nam pla and palm sugar. Mix well. Add cellophane noodles and shrimp. Mix well. Taste to flavor. Arrange on a serving plate and sprinkle with fried cashews. Serve immediately with fresh vegetables.
