2 shallots, roughly chopped
3 dried chiles
½ cup coconut milk
½ cup water
12 ounces fresh wide rice noodles
1 cup think sliced beef
1 pound Chinese broccoli, trimmed into stems
¼ cup tamarind juice
2 tablespoons sugar
2 tablespoons sweet soy sauce
4 tablespoons nam pla
Using a mortar and pestle, pound the shallots and chiles until smooth. Heat the coconut milk and water in large wok of frying pan over medium heat until it comes to a boil. Add the shallot mixture and cook, stirring, for 2 to 3 minutes. Add the noodles, beef, Chinese broccoli, tamarind juice, sugar, sweet soy sauce and fish sauce, and stir to combine. Remove to a serving platter. Serve hot.
