Servings: about 3 cups
This is a sauce for Thot Man Pla and Thot Man Kung.
1 pound cucumbers
2 serrano chiles
½ medium onion
½ cup granulated sugar
1 cup white vinegar
½ teaspoon salt
Peel the cucumbers and slice them crosswise into ⅛ inch slices. Remove the stems, but not the seeds from the chiles and slice them into thin rings. Peel the onion and remove the root part. Slice them into thin vertical slices. Combine all, mixing until the sugar is dissolved. Use within 2 hours.
