Servings: about 13/4 cup
This is a sauce for sate, Sate Kai (Chicken Satay), Sate Mu (Pork Satay), or Sate Nuea (Beef Satay).
¼ cup granulated sugar
½ cup white vinegar
¼ cup boiling water
¼ teaspoon salt
1 teaspoon ground chili paste
½ pound cucumber
2 tablespoons ground unsalted peanuts, a little larger than grains of sand
cilantro sprigs, to taste
Combine the first 4 ingredients and stir until the sugar's dissolved. Let cool to room temperature. Peel the cucumber and slice it crosswise into ⅛ inch slices. Rough chop the cilantro. Combine all, and use within 2 hours.
