2 cans tuna
2 hard-boiled eggs
1 tablespoon finely chopped phrik ki nu
¼ cup peanuts
3 tablespoons chopped shallot
4 cups oil
3 teaspoons Squid Brand fish sauce
3 tablespoons palm sugar
3 tablespoons lime juice
Thoroughly drain the tuna until dry, then fry in a pan over medium heat until the tuna is crispy. Place the fried tuna on a plate with quarters of hard-boiled eggs. Mix the chiles, crushed peanuts, shallots, fish sauce, palm sugar, and lime juice. Serve with tuna and eggs as a dressing.
