Baked Cheddar Tomatoes

Servings: 10

5 medium tomatoes
extra-virgin olive oil
¾ teaspoon salt
1 cup soft breadcrumbs
1 cup shredded Cheddar cheese
4 tablespoons butter or margarine, melted
1 teaspoon dried basil
½ teaspoon cayenne pepper

Pre-heat oven to 350°F.

Cut the tomatoes in half crosswise. Brush with olive oil and sprinkle with salt. Place, cut side up, in a 13 x 9-inch baking dish. Combine the breadcrumbs, cheese, butter, basil and cayenne pepper in a medium bowl. Spoon the mixture on top of the tomatoes. Bake for 12 to 15 minutes, or until the tomatoes are hot and the cheese melts.
