Tomato Gravy, Southern Style

This was my grandmother's recipe, it is great over hot, homemade biscuits.

6 slices bacon, finely chopped
small onion, diced
2 16 ounce cans whole tomatoes, broken up
salt and pepper, to taste
sugar, to taste — the sugar is an important ingredient to this gravy
flour or cornstarch mixed with a little water to use as the thickener

Cook bacon in a large fry pan until almost crisp. Drain off some the grease if there is a lot. Add the onions to the grease and bacon and sauté until the onions are soft. Add the broken up tomatoes to the pan and season with the salt, pepper and sugar. Simmer for a few minutes then add the flour mixture a little at a time and simmer and stir until the gravy thickens.
