1 ½ pounds lean ground beef
1 garlic clove, crushed
1 egg white
1 tablespoon sherry
2 tablespoons soy sauce
½ teaspoon liquid smoke
2 tablespoons nước mắm (fish sauce)
1 pinch of sugar
1 salt and white pepper
2 tablespoon corn starch
1 tablespoon sesame oil
Blend mixture with mixer or food processor until very smooth. Mold small meatballs on skewer (about six meatballs per skewer). Broil to perfection.
