1 tablespoon oil
2 shallots, finely chopped
1 garlic clove, crushed
2 small tomatoes, finely chopped
1 tablespoon sugar
2 cups cooked rice
1 green onion, diced
salt and pepper, to taste
Heat oil over medium heat, add shallots and garlic. Sauté until soft. Add tomatoes and sugar, cook until thickened. Add Rice and stir until completely incorporated. Add spring onions, salt and pepper. Garnish with coriander leaves, if desired.
