Greetings from the Academy of Saint Gabriel!

You asked our help choosing a surname to add to your given name <Ulric> to
create an authentic 14th-16th century Scandinavian masculine name.  You
mentioned that you're an archer.  This letter is a brief answer to your
question.

The name <Ulric> appears in Norway in the Latinized form <Vlricus> in the
mid-14th century, and in Sweden as <Ulrik> in 1460 [1, 2].  It is therefore
a perfect choice for your period.

We can suggest one surname that would be very appropriate for an archer in
your period.  <Skytte> means "shot" (as in "a good shot") [3].  We found
several examples of it in 14th and 15th century Scandinavia [4]: 

  Villekinus Skytte  1387
  Per Skytte 1483
  P{ae}r Skytt{ae} 1447

The symbol {ae} represents the letter ash, which looks like an 'a' and an
'e' squashed together.  It was pronounced like a longer version of the 'e'
in <bet>.  Either <Ulrik Skytte> or <Ulrik Skytt{ae}> fits your culture
