Here's more information on your name "Vincinii" and your desired coat of arms.

We haven't been able to find any evidence that "Vincinii" is a medieval term for "vintner." Given that, your name would not be likely to pass.

We did more research on Italian arms, and we found that crescents are very common, but we didn't find any chevrons. We also found that animals are rarer in Italian heraldry than in other countries, and that human body parts are more common. An arm or hand might be a good alternative to the scorpion as a sign of fencing speed.

The most common way to show the sea in medieval heraldry was with wavy lines of blue and white. However, this is more characteristic of English and French heraldry than Italian. Still, you could use the background "Barry wavy argent and azure" to show water.

You may want to consider reducing the amount of "stuff" in your arms. A design like "Purpure, two crescents and an arm embowed (bent at the elbow)" would be a reasonable recreation of Italian heraldry.
