Here's the information we can give you on the arms of Foix, along with some background information. You also asked about a picture of a tower at Carcassonne with a depiction of a Great Pyrenees dog, but we were unable to find one.

The arms you're looking for are "Or, three pallets gules" (in English, a gold or yellow background with three narrow red stripes running from top to bottom). (1) These are the arms of the County of Foix. We should mention that they're the arms of the County, and using them implies that you're a direct male-line descendant of one of the Counts of Foix.
