A couple of family favorites.  Kirsten

P.S.  Melissa, I think these could be made with Splenda and whole wheat
white flour.


Pumpkin Bread

3 c. flour
1 tsp. baking soda
1 tsp. salt
3 tsps. cinnamon
2 c. sugar
2 c. pumpkin
4 eggs
1 ½ c. corn oil
½ c. nuts (optional)

Mix dry ingredients and make a well.  Add all other ingredients and stir.  Bake in two loaf pans or 2 or 3 large juice cans for app. 1 hour at 350 degrees until a toothpick (or piece of spaghetti) inserted in the middle comes out clean.


Pumpkin Pie

1 ½ c. pumpkin
½ c. sugar
½ tsp. ginger
½ tsp. nutmeg
1 tsp. cinnamon
3 slightly beaten eggs
1 ½ c. milk
1  6 oz. can evaporated milk

Put in preheated 425 degree oven.  Reduce heat to 350 degrees & bake until knife inserted in the middle comes out clean.
