Lauren's Cheesecake
I had a roommate Pete in grad school. Pete's mother knew Lauren. I
never met her.
Ingredients
8 double graham crackers
1/2 cup sugar
4 T melted butter
1 1/2 lbs. cream cheese (Philadelphia brand works well)
4 eggs
1 cup sugar (or less if you want the filling less sweet)
1 t vanilla
1 pint sour cream
2 T sugar
Directions
- Crush the graham crackers and mix with 1/2 cup sugar and
melted butter. Spread over the bottom and sides of the spring form.
- Mix the eggs, vanilla, sugar and cream cheese until there are
no more lumps of cream cheese.
- Place the cheese mixture into the spring form. Preheat the oven
to 325 F and bake the cake for 50 minutes. Remove for 10 minutes.
Raise the oven temperature to 475 F. Pour sour cream and sugar
mixture on top of the cake. Return to the oven for 5 minutes.
- Best made the day before serving. Should be refrigerated. Remove
from the refrigerator one hour before serving.
