3 pounds sirloin steak
3 large tomatoes, peeled
6 jalapeño chiles
1 white onion
½ white onion
2 tablespoons red wine vinegar
1 teaspoon salt and pepper, or to taste
6 red potatoes
1 cup corn oil
1 white onion
2 eggs
2 tablespoons Worcestershire sauce

Have your butcher remove all fat from sirloin stead and grind it fresh. Chop the tomatoes, jalapeños, and 1 onion. Stir in the mustard, red wine vinegar, salt and pepper. Peel and slice the potatoes into thin round slices. In a heavy frying pan, heat ½ cup oil on medium heat. Fry potato rounds until browned, a batch at a time so they do not crowd, about 10 minutes each batch. Drain each batch on paper towels until ready to serve. Finely chop the ½ onion. In mixing bowl, mix ground meat with onion, eggs, and Worcestershire sauce. Shape into 12 patties. Heat ½ cup oil in heavy skillet. Cook the patties on the grill until well done, about 10 to 15 minutes, turning three times. In a serving dish offer hot sauce, catsup, mustard, etc. to garnish hamburgers. Place hamburgers on a serving platter with fried potato rounds on one side.
