2 chickens, cut up in small pieces
½ cup salt or less
6 to 8 lemons
10 to 15 cloves garlic, finely chopped
4 to 6 tablespoon ground coriander
Salt each piece of chicken generously, let set for ½ hour. Generously add ground coriander. Add chopped garlic. Squeeze all lemons over entire chicken pieces. Marinate approximately 4 hours. Barbecue (best) or bake at 450°F for 45 minutes until golden brown.
