chipotle Sauce:
3 cups tomato, chopped
¾ cup cilantro, fresh, chopped
3 tablespoons lime juice
1 ½ tablespoons chipotle chiles in adobo, chopped
1 ½ teaspoons cumin, ground
Meatballs:
1 pound ground beef
1 pound ground pork
2 eggs, large
½ cup dry bread crumbs
½ cup milk
2 tablespoons onion, finely chopped
2 tablespoons fresh cilantro, snipped
2 teaspoons salt
½ teaspoon pepper
Prepare chipotle Sauce:
Combine all ingredients in medium bowl. Season with salt and pepper and set aside.
Prepare Meatballs:
Mix remaining ingredients together and shape into 1 ½ inch meatballs. Heat sauce and meatballs to boiling; then reduce the heat. Cover and simmer until meatballs are done, about 20 minutes. Serve with hot cooked rice or noodles, if desired.
