Salsa Fresca

Recipe from: Family Circle

1 ½ pounds tomatoes, seeded and cut into small dice
1 small onion, finely chopped
2 jalapeño chiles, seeded and finely chopped
2 tablespoons chopped fresh cilantro
2 tablespoons fresh lime juice
¾ teaspoon salt

Combine tomato, onion, jalapeño, cilantro, lime juice and salt in medium size bowl. For best flavor, refrigerate, covered, for a few hours or overnight.

Tomato Prep:
With sharp knife, cut tomato in half crosswise between stem and bottom. Lightly squeeze over bowl to remove seeds/pulp. Broil the tomato halves, cut side down, until skin blisters and blackens. Add tomato halves to mixture in the food processor; blend until smooth.
