Servings: 1 ½ cups
1 mango or ½ of a papaya, peeled, seeded, and chopped (1 cup )
1 medium sweet green pepper, seeded and chopped (¾ cup )
1 small red onion, finely chopped
1 jalapeño pepper, finely chopped
2 tbsps. pineapple juice or peach nectar
1 tablespoon lime juice
⅛ teaspoon. salt
⅛ teaspoon. pepper
Stir together mango sweet pepper, onion, jalapeño pepper, pineapple juice, lime juice, salt and pepper in a large bowl. Cover and refrigerate up to 3 or 4 days.
