Servings: 2 ½ cups
4 medium tomatoes, very ripe, peeled, seeded and diced
1 fresh jalapeño pepper, seeded, minced
1 tablespoon chopped fresh cilantro leaves
1 medium red onion, minced
½ teaspoon salt and pepper, or to taste
1 tablespoon Key West lime juice
In medium bowl, mix together tomatoes, jalapeño, cilantro, onion, salt and pepper; combine well. Add lime juice and chill well before serving.
