Servings: 4 to 6
This goes well with tuna or swordfish.
2 handfuls ripe tomatoes, dessed, finely chopped
1 handful small capers, soaked, drained
½ red onion, finely chopped
½ clove garlic, finely chopped
1 handful parsley, finely chopped
salt and black pepper, to taste
balsamic vinegar, to taste
6 to 8 lugs olive oil
dried chilli flakes, to taste
4 anchovy fillets, finely chopped
½ cucumber peeled, deseeded, finely chopped
Mix the ingredients together and season to taste.
