Use as a dip for tortilla chips or to top grilled chicken or fish.
1 cucumber, peeled and diced
½ cup chopped onion
3 tablespoons chopped cilantro
1 to 3 tablespoon chopped jalapeño pepper, to taste
2 tablespoons white vinegar
1 teaspoon sugar
Mix everything together in a bowl. Cover and chill at least 2 hours before serving. Mix again before serving.
