This is a throw together salsa when I needed something to go on my tacos. It was yummy and didn't want to forget it so I am posting it here.
1 15 ounce can pineapple chunks drained reserving the juice
1 nectarine, diced
½ red onion, diced
¼ cup cilantro, chopped
1 chipotle chile in adobo, finely chopped
1½ tablespoons brown sugar
2 tablespoons lemon juice
2 garlic cloves, finely chopped
1 pinch salt
Chop pineapple chunks to desired size. Combine ingredients in bowl. Add 1 or 2 tablespoons of reserved pineapple juice. Add salt to taste. Stir and serve.
