Delicious tomato salsa typical of Sonora,Mexico
4 large tomatoes
8 chiltepin, or more to taste
4 garlic cloves
2 teaspoons oregano
1 teaspoon salt
1/16 teaspoon cumin
1 teaspoon vegetable or corn oil
Rinse tomatoes and slice in half, removing stem area. Heat oil in non-stick skillet and place tomatoes face down in pan. When tomatoes have browned, pour in ¼ cup of water, add the chiltepin peppers and cover. Simmer 10 minutes until tender. While tomatoes simmer, place garlic, oregano, salt and cumin in a blender. When tomatoes are ready to peel, pull off skin and discard. Blend to desired consistency.
