500 grams (a little more than a pound) spiny-clawed prawns
2 tablespoons light soy sauce
1 tablespoon sugar
½ teaspoon ground pepper
2 teaspoons cilantro roots, cut into short lengths
2 tablespoons cooking oil
Wash prawns, remove feelers, and arrange in an oven-proof dish. Pound the pepper and cilantro roots well in a mortar. Heat the oil in a frying pan. When hot, add the cilantro root and pepper mixture. When fragrant, stir in the soy sauce and sugar, then pour over the prawns.
Bake prawns in a preheated oven at 350°F until they turn red all over (about 5 minutes). Remove the prawns from the oven and serve.
