2 teaspoon sugar
wine vinegar to taste
Peel cucumber. Cut in half lengthwise and scoop out the seeds using a teaspoon. Slice the cucumber thinly. Make a dressing with the juice of one lemon, sugar, and freshly ground black pepper and wine vinegar to taste.
Toss the cucumber slices in the dressing and garnish with a shallot (spring onion), finely sliced, and a little chopped hot green chili pepper.
