Recipe from: Spicy Thai Cuisine
¼ cup ground dried shrimp
¼ cup yard-long beans cut into thin slices and crushed
1 to 2 tomatoes, sliced
1 tablespoon ground roasted peanuts
Wash the cucumbers, remove the seeds and shread. Toss the shredded cucumber, tomato, yard-long beans together with the dressing. Then add the ground dried shrimp and ground roasted peanuts and toss again. Arrange on a plate, garnish with slices of prik ki nu and serve.
For the Dressing:
1 teaspoon chopped chiles
2 teaspoons palm sugar
2 tablespoons nam pla
2 tablespoons lime juice
Mix all the ingredients together.
