Recipe from: All Thai Food
A beautiful and fresh salad which goes really well if you have any oily food as it guts straight through the fat!
1 or 2 green mangoes
handful of cilantro leaves
3 finely sliced shallots
1 or 2 cloves of garlic, crushed
1 teaspoon palm sugar
2 hot chiles, chopped finely
1 or 2 bunches of Asian parsley
2 teaspoons nam pla
juice from 1 or two limes
To make the dressing mix the sugar, chiles, juice from one lime, fish sauce and garlic with equal amounts of water and test for taste. Add more of anything you need.
Chop the celery, cilantro, mango, and shallots. Mix the dry ingredients with the dressing and serve.
