300 grams Beef
500 grams lettuce or swamp cabbage
200 grams lettuce or swamp cabbage or bean sprouts
2 Chinese celery plants
2 tablespoons fried garlic
3 cilantro roots
½ inch lenght of galangal
1 cm length of cinamon
1 bay leaf
6 cups water
4 tablespoons Squidbrand fish sauce
2 tablespoons light soy sauce
1 tablespoons dark soy sauce
Wash meat, cut into large pieces, place in pot. Add water, cinamon, cilantro roots, light soy sauce, dark soy sauce, fish sauce, and bay leaf. Heat to a boil, then cover, reduce heat, and simmer until the meat is tender. Season to taste and bring to a boil once again.
Blanch only swamp cabbage, other vegetables needn't blanch, cut into 1 inch pieces, and place in bottom of serving bowl. Place swtewed beef on the vegetable. sprinkle with coarsely cut celery, fried garlic, and pepper, and serve with rice or noodle.
If you like sour taste add 1 tablespoon of lime juice.
